The Best Gluten Free Paleo Chocolate Chip Cookies + Life Update!

Well, the holidays came quickly and seemed to go just as fast. This year, I spent the majority of the time relishing in full relaxation mode: super slow mornings sipping my matcha lattes, skipped my high intensity cardio workouts and opted for restorative yoga classes instead, and enjoyed some great quality time with my family. It was much needed. For anybody new to my blog, I have been juggling 3 part time jobs and in school studying culinary nutrition since late July. My personal time went out the window and there were some days where seeing the light at the end of the tunnel became challenging. Luckily, I finished school right before the holidays and my jobs lightened up, so I soaked in every single moment of this vacation time. I'm normally the type that always needs to be doing something or going somewhere, but I knew I really needed to listen to body. I think connecting the mind body and spirit is so vital to overall health. You can buy all the organic produce and exercise every day, but if you're not in tune with your body it eventually starts to effect all the other areas of your life.

Now that I'm officially certified in Culinary Nutrition, I'm beyond excited to put my skills to work. I plan on helping clients heal through whole foods, navigate the ins and outs of what's healthy and what might be just marketed as healthy but actually terrible for you, and provide delicious recipes with clean ingredients that fuel your body and keep you satiated. I'm starting 2018 off with the Best Gluten Free and Paleo Chocolate Chip Cookies. Ever since going gluten free, I've had my fair share of card board tasting sweet treats. Gluten is a sticky protein found in wheat and is basically what gives bread that doughy, soft consistency, so it's really tough to find a cookie sans gluten that actually tastes like the real deal without being being loaded with sugar....until now!

The moment you've all been waiting for......

Ingredients

  • 1 cup of finely ground almond flour 
  • 4 tablespoons of coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons of ghee 
  • 1/2 cup of crystallized monk fruit sweetener 
  • 1/4 cup of coconut sugar
  • 6 tablespoons of almond butter 
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg
  • 3/4 cup Enjoy Life chocolate chips 

Directions

  1. In a medium mixing bowl, stir together all the dry ingredients including the almond flour, coconut flour, baking soda and salt. Set aside.
  2. In a large mixing bowl with an electric hand mixer or using a stand mixer or by hand, beat together the ghee, coconut sugar, and monk fruit sweetener. 
  3. Add in the almond butter and vanilla extract and mix until combined. Beat in the egg slowly and mix until well incorporated. Stir in the dry ingredients until well combined. Then stir in almost all of the chocolate chips saving some to top the uncooked cookies before baking.
  4. Preheat the oven to 350 °F and line a baking sheet with a piece of parchment paper.
  5. Roll the dough into small dough balls. Place about 4" apart (they don't spread out very much, so don't worry about them being too close together!) Press the cookies down lightly with the palm of your hand and clean up edges so they're in a nice circular shape.
  6. Bake for 10-15 minutes checking on them a few times. They'll be very soft but will continue to cook and harden up as they sit on the cookie sheet.
  7. Let cool completely on the baking sheet. Store in an airtight container for up to 3 days.
